The Castle of Sala is located in Umbria, a short distance from the border with Tuscany, about 18 kilometers from the historic city of Orvieto. The lands of the Castle, an imposing medieval manor, extend over 600 hectares, of which 229 hectares are planted with vines at an altitude of 220 - 470 meters above sea level, among the gentle hills that characterize the beautiful countryside of these areas. The name Cervaro comes from the noble family that owned the Castello della Sala in the 14th century: the Monaldeschi of Cervara. Chardonnay grapes combined with a small portion of Grechetto to create a wine designed to age gracefully and represent the elegance and complexity of a unique place. Cervaro della Sala was one of the first Italian white wines to undergo malolactic fermentation and aging in barriques, with the first vintage in 1985.
The grapes are harvested in the very early hours of the morning so that they reach the winery intact and not stressed by the high temperatures of the day. The musts, obtained from the pellicular maceration of the grapes at 10 °C for about four hours, are transferred by gravity into decanting tanks where they clear before being transferred to barriques. This is where the alcoholic fermentation takes place, followed by the malolactic fermentation. Usually after five months the Chardonnay is ready to be transferred back to steel tanks to blend with the Grechetto, which is vinified separately and without any wood.
Subsequently, the Cervaro della Sala is aged for several months in the historic cellars of the Castello della Sala before being released onto the market.
It presents with a light straw yellow color with greenish reflections. On the nose it opens with citrus notes of pink grapefruit accompanied by floral scents of elderflower and chamomile; followed by delicate aromas of vanilla, custard cream and a typical mineral nuance of flint stone, a distinctive characteristic of the Chardonnay produced at Castello della Sala. On the palate it is taut, elegant, and characterized by notes of toasted almond, white pepper and ginger; the savory texture is well balanced by the freshness. This is a vintage that stands out for its precise taste, capable of combining energy and finesse, confirming the vocation of Cervaro della Sala to evolve gracefully over time.
