From some of the oldest Sangiovese vineyards comes the ultimate expression of Bibi Graetz’s dream: Colore. Poor, sandy soils, rich in stones and high altitudes create the perfect terroir for a wine capable of telling the true story of Tuscany and its flavors. Only the finest barrels will become Colore.
The grapes for Colore were selected from the four most suitable vineyards: Lamole, Vincigliata, Olmo and Siena. Each vineyard is harvested up to eight times, so that all the grapes are collected at the right point of ripeness. After a preliminary selection in the vineyard, the grapes are again selected once they arrive in the cellar. After the first selection in the vineyard, the grapes are pressed gently and then transferred to open barriques for fermentation, paying great attention to keeping each plot separate from the others. The spontaneous fermentation lasts about two weeks with an additional week of maceration on the skins, during which 6-8 manual pricks are performed daily. After fermentation, the wine is moved to barriques, where the malolactic fermentation takes place.

Intense intense ruby color. Complex and multifaceted aroma of cherries, cassis, blackberries and jammy raspberries, cocoa, dried flowers and details of humus, iodine and tobacco, oriental spices. Elegant tannic flavor with enveloping intensity and softness, full and muscular structure supported by fine freshness and vibrant minerality.

Perfect with pasta or cannelloni seasoned with rich and flavorful meat sauce. Great with beef stew or wild boar in a sauce. Ideal with oven-baked duck or slices of red meat grilled. It pairs well with aged goat cheese or long-aged Parmigiano Reggiano. It elegantly complements preparations based on black truffle.
