Desiderio was a bull that lived on the Le Capezzine farm in Avignonesi more than a hundred years ago. The largest bull in Tuscany at that time, this majestic animal contributed to defining the Chianina cattle breed, specific to the Fiorentina steak. It was a natural choice to dedicate this Merlot to the beloved bull as a testament to the origin of the wines. This is Merlot from Tuscany at its best.
Fermentation using indigenous yeasts in stainless steel vats at controlled temperature for 25-30 days, with daily additions and adjustments.
20 months in 225-liter oak barrels
Explosive olfactory impact. The wide aromatic bouquet ranges from cherry jam to blackcurrant, passing through hints of lilac flowers and notes of black tea and liquorice. The anise is dark with a dense texture that envelops the palate with depth and warmth. The liquor is juicy, in perfect symbiosis with the olfactory sensations. Dense and lively tannins, accompanied by a deep persistence, prelude a long aging in the bottle. Pleasant today, extraordinary tomorrow.
