The Grande Année 2018 is a blend of 19 crus, mainly from Verzenay, Aÿ and Mareuil-sur-Aÿ for 66% Pinot Noir and from Chouilly and Cuis for 34% Chardonnay.
Dosage: 6 grams/liter
The fermentation of the base wines takes place entirely in old oak barrels. This practice promotes natural micro-oxygenation, which gives the wine greater aromatic complexity and a high potential for aging.
84 months on yeast
A garment with golden-yellow reflections, a testament to the maturity of the wine, but also to Bollinger's winemaking methods. On the nose, fresh notes of citrus fruits and Granny Smith apples are initially revealed, enhanced by hints of orchard fruit: white peach, apricot, and plum nectarine. As the wine is aerated, notes of fresh almond emerge among aromas of breadcrumbs and acacia honey. This aromatic harmony is structured around a beautiful central line, where citrus notes and minerals blend with a delicate touch of white peony. On the palate, it is structured and balanced, revealing notes of cooked fruit and tart apple. The texture evolves into a gradual fusion, offering a creamy effervescence.

Excellent with tuna carpaccio or sea urchin tartare enhanced with citrus notes. Warm crustaceans, lobster, lobster or crayfish cooked in a steam oven or sautéed in clarified butter. Fine fish, rombo or spigole cooked in a pan with rich sauces, such as a beurre blanc with caviar.
