San Giusto a Rentennano (of Etruscan origin), overlooks the high course of the Arbia river in the southernmost part of Chianti Classico. Ancient Cistercian monastery (hence already named San Giusto alle Monache), then an unruly fortress, was marked as a boundary between the counties of Siena and Florence according to a treaty of 1204. The castle still retains the Guelph merlons of the wall, the massive walls at Barbacane and the underground cellars, still used today for the maturation of the wines in barrels. Owned by the Martini family of Cigala since 1914, today by the brothers Anna, Lucia, Elisabetta, Francesco, Alessandro, Luca.
Fermentation and maceration is carried out in concrete and steel tanks for about 18/20 days
about 20 months in French oak barrels and 6 months in bottle
Intense ruby red color. On the nose it is rich in vanilla nuances, in addition to the typical fruity and spicy aromas of the type. The flavor is balanced, complex and deep, supported by a nice tannic structure and a pleasant hint of spiciness.
Robert Parker 95/100, Decanter 95/100, James Suckling 93/100, Vinous 94/100, Wine Spectator 94/100, Gambero Rosso 3 Bicchieri
Excellent with pappardelle with hare, wild boar or mixed meats. Excellent with the classic Fiorentina, beef ribs, roast lamb or rosemary-grilled cut of beef. Ideal with braised dishes, Impruneta peposo or stracotti. It pairs perfectly with light game dishes, wild boar stews or pheasant (traditionally served with sweet-and-spicy sauces or onion sauces).
