The Alizée et Thibault Tassin winery is a small wine-growing enterprise located in Celles-sur-Ource, in the heart of the Côte des Bar (department of Aube, Champagne, France).
Founded in 2019 by Thibault — heir to the Tassin family — and his wife Alizée, the company was born from the restoration of an old farm in Landreville, which was transformed into an artisanal winery.

Softness of the whole clusters just harvested. Spontaneous fermentation and strictly conducted using indigenous yeasts. The base wine ages for approximately 12 months in used oak barrels.
about 36 months on the yeast
Intense golden yellow color with a fine and persistent perlage. On the nose, the notes of fresh citrus (cedar, bergamot) and white peach stand out, accompanied by a hint of crunchy red fruits inherited from Pinot Noir. Subsequently, warm and enveloping nuances of vanilla, fresh butter and a slight sweet spiciness emerge. In the mouth, it shows a vibrant saline tension and a sharp acidity that is perfectly integrated, giving dynamism and an extraordinary freshness to the drink. The finish is dry, clean and of extremely long persistence, leaving a decidedly salty and mineral aftertaste in the mouth.
Raw fish and crustaceans: Perfect for oysters, lobster tartar or red shrimp, where the wine’s pronounced minerality softens and balances the fattiness of the fish. Smoked fish: Excellent with smoked salmon or swordfish, thanks to the acidity that perfectly cuts through the smoky notes. Land-based appetizers: Excellent with fine raw prosciutto and culatello. Aperitif: Extraordinary to enjoy on its own, as a classy aperitif to start an important dinner.
