The grapes benefit from perfect sunlight exposure, giving the cup a golden yellow color and a fine perlage. On the nose it opens with wide floral notes, hints of citrus, herbaceous and balsamic nuances. On the palate it is creamy and complex, supported by a pronounced mineral freshness and a remarkable structural depth.

Oysters and raw seafood: the great freshness and silky sweetness balance the oysters, the tuna or squid tartare. Smoked fish: excellent with smoked salmon or swordfish, enhanced by the toasted and almondy notes of the wine. Seafood risotto or crustacean risotto: the notes of bread crust and the wood aging combine wonderfully with a rocky risotto or with red shrimp. First courses with herbs or vegetables: an excellent option to enhance the vegetable and mineral component. Grilled or baked fish: ideal with rombo, deer or slices of grilled tuna. White meats: perfect pairing with pork fillet in crust, duck breast or chicken in sauce, where the structure of the Champagne does not detract.
