Champagne Pol Roger created its Prestige Cuvée in tribute to Sir Winston Churchill, recalling the qualities he sought in his champagne: robustness, rich body and relative maturity.
The must undergoes two débourbage (decantations), one in the press immediately after pressing and the second, a débourbage à froid, in stainless steel tanks at 6°C for 24 hours. A slow cold fermentation with the temperature kept below 18°C occurs in stainless steel tanks with each variety and each village kept separate. The wine undergoes a complete malolactic fermentation before the final blending. The fermentation takes place in the bottle at 9°C in the deepest cellars of Pol Roger (33 meters below the road level), where the wine is kept until manual remuage, a rarity in Champagne today. The very fine and persistent foam for which Pol Roger is renowned owes much to these deep, fresh and humid cellars.
120 months on yeast Dosage: 6 grams/liter
Color: Antique gold, fine and persistent perlage
Flavour: The first nose exudes generous aromas of pastry with hints of vanilla and brioche, followed by subtle fragrances of sweet spices as it opens. The bouquet then develops to reveal a range of dried fruit and candied exotic fruits mixed with notes of banana and papaya.
Taste: The wine is honest and lively on the entry, leaving room for an attractive and opulent texture with a delicious balance. We are therefore treated to an extraordinary explosion of flavors, elegantly blending toasted almonds, acacia honey, nougat liqueur and ginger bread. This wonderful harmony is supported by a structure that shows a soft, creamy and round character. Well structured with superb aromatic persistence, this 2012 vintage stands out for its complexity and power.
