Fermenting each plot, vineyard and MGA separately is the biggest task, but it is also one of the values that, along with continuous experimentation, has always been a part of our reality. This is where the idea for this Barolo Riserva came from; it is the result of assembling several selected vineyards. The choice is determined by the decision and pursuit of excellence for a classic Barolo Riserva that has aged for a long time.
Harvesting the grapes is carried out strictly by hand around mid-October. For this wine, we carried out part of the vinification using whole grapes. The remaining part was crushed, pressed and transferred to an iron vat for maceration and alcoholic fermentation. After a few days of pre-fermentation maceration at low temperature, fermentation begins through an increase in temperature and lasts about 20 days with regular refilling. Malolactic fermentation is carried out in wood.
After about 24 months in large barrels, they are assembled before bottling.
Color: Intense ruby red
Nose: On the nose it presents notes of small ripe red fruits with balsamic and citrus nuances.
Taste: On the palate it is medium-bodied, rich, full and elegant. The tannins typical of the Serralunga area are well integrated and with a sweet finish. The vibrant acidity adds depth to the wine.
