Mark Haisma, an Australian-born winemaker transplanted to Burgundy, presents the Saint-Romain Blanc ‘Le Jarron’, a Côte d’Or label with a refined and slightly exotic personality. The Saint-Romain Appellation d’Origine Controllée takes its name from the homonymous commune of the Côte de Beaune where it is located. Unlike most AOCs in the area that are located along the main slope of the Côte de Beaune, the vineyards of Saint-Romain are located in a side valley that extends towards the plateau of the nearby Hautes Côtes de Beaune.
The whole clusters undergo a very delicate pneumatic pressing to extract the must and avoid bitter notes; the alcoholic fermentation takes place in a traditional way. Haisma prefers indigenous yeasts (spontaneous fermentations) to preserve the identity of the vineyard. Malolactic fermentation: a complete change to provide stability and a more silky texture, balancing the typical and sharp acidity.
12 months in French oak barrels
Pale straw yellow color with golden reflections. It opens with perceptions of apricot, mango and pineapple, combined with hints of flowers and irresistible sweet and creamy notes of almond and salty butter. The flavor is smooth and elegant, savory and enveloping, featuring refreshing returns of citrus fruits and a mineral finish that lingers on the palate for a long time.
Fish tartare, oysters and delicate carpacci. Risotto with seafood or a classic white pasta with shrimp and zucchini. Steamed or grilled fish, served with aromatic herbs and delicate beurre sauce.
