Traditional, which prevents premature oxidation. Malolactic fermentation and passage of part of the wines into barrels, to allow the aromas to acquire greater complexity. The Pinot Noir Mareuil-sur-Ay and Riceys still red wine is obtained through maceration and incorporated at 7-8% to obtain a rosé with a delicate color, fruity and intense flavor.

Color: Salmon pink, with reddish reflections. Fine, creamy and persistent foam.
Flavour: The first nose is of red fruits, with notes of cherry and wild strawberries. Later, citrus notes and grapefruit peel appear.
