The Champagne Écueil-Trepail Blanc de Blancs by Frédéric Savart is a rare Blanc de Blancs from the house, born from the union of the calcareous soils of Écueil and Trépail. A pure Chardonnay that combines mineral tension, floral elegance and fine creaminess, an authentic expression of the Montagne de Reims.

Fermentation in stainless steel with indigenous yeasts and prolonged aging on the yeasts without malolactic fermentation
30 months on yeast
Bright straw yellow color and very fine perlage. Strong citrus notes, white peach, melon and brioche bread with iodized and mineral flavors. On the palate it is deep, intense and fine, with a finish characterized by vibrant freshness, silky and mineral.
Crustaceans and Molluscs: oysters, tartar and carpacci of white fish (e.g. sea bass), raw shrimp and red prawns. Sushi and Sashimi. Delicate dishes and noble fish: fried capesante in butter, monkfish in a mugwort sauce, baked or steamed fish. Fresh and matured cheeses: fresh goat’s cheese, robiola and soft cheese that has not been aged too long.
